I'm dethawing a duck and planning an artichoke pesto on rice. (because blenders are fun)

Debated roasting it tonight and just dismembering it cold tomorrow.

I still have half a bottle of bad wine for canard au van.

I'll probably wind up fatting it completely and just setting the fat in a corner to render some goo.

Even when I had half the fat still attached on my last roast, it rendered about ... oh... a pint of fat that scummed up my stock.

I do not enjoy basting off that shit for 40 minutes.
