I am not a vegetarian, nor am I an experienced vegetarian cook *hides his various cookbooks with entire sections dedicated to the subject*
This is the placeholder for the working prototype of the vegetarian alternative to "The soup of 1000 deaths" I REFUSE to just strip it of its meatses and declare it done, or dumb it down to a simple cream of mushroom.
Pot A) 2 cups (sliced not diced) shitake mushrooms simmered in about 2 cups veggie broth
Pot B) saute' 1/2 bulb fennel or 1/2 white onion (preference) in 2 tbs butter. Medallion and dredge 3 stalks of fennel or 1 leek in panko.
Pot C) fry the dredged crunchy veggies, retrieve and cool when gbd
Pot D) (and you should probably do this step ahead) boil 1 cup of dry split broad beans
Combine A and B, add about 1 heavy handful of shaved parmesan, and 1/8th-1/4th pint of heavy cream,mind color texture.
Top with beans, sprigs of fennel and the crunchies
