Chicken with Honey Mustard Sauce and Toasted Almonds

Ingredients:
* 4 skinless, boneless chicken breasts
* 1/2 cup honey
* 2 tablespoons olive oil
* 1 cup mustard
* Vegetable cooking spray
* 1/4 cup toasted almonds
Directions:
Preheat the oven to 350 F.
Sprinkle the chicken with salt and pepper to taste. In a large skillet over medium-high heat, brown the chicken in the olive oil for about 5 minutes, or until lightly browned on both sides. Remove from heat and set aside.
Blend the honey and mustard in a small mixing bowl. Set aside.
Spray a baking pan with vegetable cooking spray. Lay the chicken in the pan and spoon the honey mustard mixture evenly over the top. Sprinkle the chicken with the almonds and bake for about 30 minutes. Check for doneness and serve when cooked through.
