6 chicken breasts, skinned and deboned
1 (16 oz.) can tomato sauce
1/2 c. chopped onion
1 sm. garlic clove
1/2 c. Parmesan cheese
3 tbsp. Italian seasoning
1/2 tsp. salt and pepper
1/2 c. ricotta cheese
1/2 c. cottage cheese
1 (8 oz.) pkg. Mozzarella cheese
1/2 c. dill weed
Combine tomato sauce, garlic, Parmesan cheese, 1 teaspoon Italian seasoning, salt, pepper, and simmer 15 minutes. Combine ricotta, cottage, 1/2 Mozzarella, stir in remainder of Italian seasoning salt, pepper, dill weed. Spread about 1/2 cup of cheese mixture into center of each chicken breast. Roll up jelly roll fashion and place in lightly oiled shallow pan. Pour sauce mixture over chicken. Sprinkle with remaining Mozzarella cheese. Bake at 350 degrees for 35 minutes.
