Candied Sweet Potatoes
1/4 cup butter or margarine
1 cup brown sugar, firmly packed
1/4 cup orange juice
1/2 teaspoon salt
1 teaspoon grated orange rind
6 medium sweet potatoes, peeled, cut in half lengthwise, cooked
Chopped nuts (optional)
In a 320 degree skillet combine, butter, brown sugar , juice, salt and rind or cinnamon. Boil, stirring about 2 minutes. Add sweet potatoes to syrup and simmer 10 minutes at about 220 degrees, spooning syrup over potatoes frequently and turning. Serve hot; garnish with chopped nuts if desired.
