What you need:
1 (3 pound) pork loin
Salt and pepper
1 cup water
3 tablespoons coarse grained mustard
3 tablespoons apricot preserves
1 tablespoon Market Pantry (tm) butter, melted
1 teaspoon Market Pantry(tm) minced garlic
What you do:
1 Heat oven to 450 degrees F. Season roast with salt and pepper.
2 Place in a shallow uncovered roasting pan. Roast 15 minutes.
3 Reduce temperature to 350 degrees F. Pour water over roast and continue to roast 30 minutes longer.
4 Meanwhile, stir together remaining ingredients. Spoon the glaze over the roast, spreading to cover it. Return to oven and roast 15 minutes or until internal temperature reaches 145 degrees F.
5 Place roast on a warm platter and cover for 10 minutes before slicing.
